From Recipe Xchange at www.plussizenow.com/ns/ "Italian Stallion" Chicken and Couscous Stuffed Tomatoes Submitted By: Sarah C. Ingredients 2 medium tomatoes 1 NutriSystem Chicken Breast Patty 1/4 cup shredded nonfat mozzarella cheese (if desired, counts as 1 protein serving) 1/4 cup fresh basil, chopped 1/3 cup couscous (prepared, ie: you've added the boiling water, covered and let stand as per couscous prep. standards.) 2 Tablespoons fat free balsamic dressing 5 large black olives, chopped 1 clove of garlic, minced Fresh ground pepper Directions 1. Preheat oven to 375 degrees. 2. Cut the tomatoes crosswise in half. Set ½ of a tomato aside to be used on the chicken breast patty. Scoop out the pulp in the 3 remaining halves; set aside. Invert the tomato shells on paper towels to drain. 3. In a bowl stir warm couscous, cheese (if using), black olives, fresh basil (save some for your chicken), garlic and pepper to taste. Then gently stir in the tomato pulp. 4. Place the tomato shells in a baking dish. Spoon the couscous mixture into the shells, pressing the mixture firmly into the shells. Drizzle with 1 Tbsp. of the fat free balsamic dressing and bake at 375 degrees F (190 degrees C) for 10-20 minutes or until heated through. The time will vary depending on the ripeness of the tomatoes. 5. Place the NutriSystem Chicken Breast Patty on a baking sheet. 6. Slice the remaining tomato and place on top of the patty, top with chopped fresh basil, drizzle with the remaining fat free balsamic dressing. 7. When the stuffed tomatoes are done remove from over and set aside to cool. 8. Place chicken breast patty in oven for 5 minutes. 9. Serve hot on a bed of greens. Enjoy! Counts as 1 dinner entrée (couscous replaces wheat roll included with patty), 2 vegetables, 1 protein (if using cheese), salad vegetables, 1 fat, 2 Tbsp. fat free dressing – an entire dinner (for men double olives in stuffing for 2nd fat)
