recipe from Recipe Xchange at http://plussizenow.com/ns/ Breakfast Casserole Submitted By: Esta Ingredients 1/2 cup Southwest style Egg Beaters 1/4 cup low-fat cottage cheese 2 Tablespoons fat-free sour cream 1 Morningstar veggie sausage link 1/4 cup chopped spinach 1/4 cup chopped broccoli 1/4 cup fat-free cheddar cheese Directions Blend cottage cheese and sour cream together until cottage cheese is smooth. Combine all ingredients. I used a small souffle cup to bake mine in. Bake at 350 for 30-40 minutes until a toothpick inserted in center comes out clean. Counts as 1 breakfast entree + 1 protein
