And you get to eat the whole thing!! Ingredients 1 egg, slightly beaten 1/2 banana, mashed 1/3 cup vanilla non-fat yogurt (100 cals/8 oz), (Replaces milk in pancake mix) 1/2 teaspoon vanilla extract 2 Tablespoons sugar substitute (I use Splenda) 1 package NutriSystem Pancake Mix 1 Tablespoon chopped nuts (optional) Directions Preheat oven to 375 degrees. In small bowl, mix banana, egg, yogurt, vanilla, and sugar substitute, stirring well after each addition. Stir in pancake mix. Add nuts, if desired. Bake 35 minutes or until toothpick inserted in center comes out clean. If you prefer to cook this in the microwave, texture will be a little spongy, but the taste is great. I microwaved mine in a large cereal bowl for four minutes. You could also make muffins by filling muffin cups 2/3 full and removing them from oven when slightly brown on top.
