Jazzman's Chocolate Meringue Bits
with Strawberries and Cream

Ingredients
4 egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
2/3 cup Splenda
1/3 cup cocoa powder
1 cup reduced-fat, tub-style whipped topping
40 strawberries

Directions
1. Preheat the oven to 225 degrees.
2. Line two baking sheets with parchment paper.
3. Beat the egg whites, cream of tartar, and vanilla at high speed with an electric mixer until frothy.
4. Add the Splenda, 1 Tablespoon at a time, beating until stiff peaks form, roughly 5 to 7 minutes.
5. Gently fold in the cocoa powder until completely incorporated.
6. Spoon heaping tablespoons of the mixture onto the baking sheets.
7. Bake for 1 hour and 30 minutes; turn the oven off.
8. Let the meringues stand in the closed oven for 8 hours or overnight. Then store in an airtight container.
9. Just before serving, top each meringue with 1 scant teaspoon of whipped topping and a strawberry.

Ingredients
2 cups low carb baking mix (between 80-110 calories per 1/4 cup)
1 Tablespoon baking powder
equivalent of 8 packets sweetener
1/2 teaspoon salt
1 cup water
2 eggs
1/4 cup sugarfree preserves ( I like stawberry at 10 cal. a T, or you can use applesauce)
3 Tablespoons cocoa
2 teaspoons vanilla

Frosting (optional)
1/2 cup spreadable FF cream cheese
vanilla to thin
5 packets sweetener
1 1/2 Tablespoons cocoa

Directions
Preheat oven to 350 degrees. Mix all muffin ingredients and divide evenly between 12 Pam-sprayed muffin tins. Bake 15 minutes or until done.

For frosting, blend all ingredients, divide by spoonfuls on top of cooled muffins, then spread.

These are good hot or chilled. You can freeze them, too, and grab them out individually as needed.

Unfrosted, these have 88 calories each. With frosting, they go up to 99. You can use these as a 100 calorie (1) snack, or even have 2 for breakfast like the NutriSystem muffins. They are within the 200 calories or below category for breakfast, so you can still add a fruit and protein (unless you want to count the frosting as your extra protein). The muffins themselves are high in protein already.

Ingredients
2 Tablespoons fat free Cool Whip
1 teaspoon natural peanut butter (the kind that separates - no sugar added)

Directions
Mix all ingredients in a small bowl. It's delicious! I save my fat serving and have this as a dessert on days when I'm up late and had my NS dessert earlier. You can also use it as a frosting for the chocolate fudge cake or the NutriSystem cookies.
