Microwave Apple Crisp

Ingredients
1 apple, peeled, cored and diced
Splenda
cinnamon
1 package NutriSystem Low-Fat Granola
fat-free whipped topping, for garnish

Directions
Place diced apple in small microwave dish. Sprinkle with Splenda and cinnamon. Cook on low for 2 minutes or until apple is slightly softened. Top with granola cereal and continue microwaving on HIGH for 3 minutes. Garnish with a dollop of fat-free whipped topping. Add milk as part of your dairy serving if desired. It's like dessert for breakfast!

Counts as 1 breakfast entree and 1 fruit serving and 1 free food.
Apple Pie

Ingredients
1 NutriSystem apple granola bar
I Can't Believe It's Not Butter Spray
1 Tablespoon walnuts, crushed
1 apple, sliced (recommend Fuji)
vanilla
sugar-free pancake syrup
freeze-dried sour cherries
cinnamon
Splenda
low-carb, sugar-free ice cream, optional

Directions
Preheat oven or toaster oven to 350 degrees.
Spritz ramekin with ICBINB spray.
Crumble NS apple granola bar into bottom of bowl and sprinkle crushed walnuts over that.
Slice apple (peel on) over top of "crust".
Splash a little vanilla and sf pancake syrup over that and a few more spritz of "butter" spray.
Sprinkle some freeze-dried sour cherries, cinnamon and Splenda to taste.
Bake for 25 minutes @ 350 degrees.
Serve warm, topped with small dollop of low-carb, SF ice-cream.

Counts as 1 breakfast entree + 1 fruit + 1 fat.
(I also count this as 1 dessert as it is so decadent and the free foods are a little over the top, but if you divide it into 3 servings, well, you do the math.)
Paul's Apple Bundt Cake

Ingredients
1 package of NutriSystem Pancake Mix
1 egg
1/2 cup of unsweetened applesauce
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
3 packages Splenda (or sweetener equal to 1 Tbsp. of sugar)
12 squirts I Can't Believe It's Not Butter spray
2 Tablespoons any calorie-free maple-flavored syrup

Directions
Place pancake mix, cinnamon and sweetener in a large microwave safe bowl (Paul uses a 3" x 4.5" wide ceramic cereal bowl) and mix; add egg, applesauce, and vanilla and stir thoroughly until all ingredients are well mixed.

Leave in bowl and place in microwave. Cook in microwave on high for 3 minutes (longer if necessary). Finished product should resemble a small individual bundt cake (depending on dimensions of bowl used) and be moist with the texture of a sponge cake.

Turn upside down onto serving plate and spray with 12 squirts of ICBINB spray, and drizzle with syrup. Enjoy!

Sierra's Apple-Peach-Pancake Mix

Ingredients
1/2 apple, sliced thin
ICBINB or your favorite butter spray
1 Tablespoon chopped walnuts, divided in 2
1 egg
1 NutriSystem pancake mix
1/2 cup diced peaches with juice (the lite kind)
cinnamon
Splenda
1 teaspoon vanilla
Quaker Oats (approx 2-3 Tablespoons)
FF/SF syrup, optional

Directions
Spray a 1-quart pan with Pam or ICBINB. Lay the sliced apples across the bottom. Sprinkle them with Splenda and cinnamon and half the walnuts. Spray it all with ICBINB. In another bowl, mix up the pancake mix, egg, 1 tsp vanilla, 1 tsp cinnamon, and peaches. Pour this mixture onto the apple bottom. Top with raw oatmeal, the rest of the nuts, more Splenda and cinnamon, and spray it all with ICBINB. Microwave until firm to the touch and springy (in my weak MW, it was about 5 minutes). Pour onto plate and enjoy. I added FF/SF syrup, but it really didn't need it.

Counts as 1 breakfast entree, 1 fat (walnuts), 1 fruit (1/2 apple and peaches), 1 protein (egg). I count the small bit of oatmeal on top as a free food.
Banana (Nut) Bread

This bakes up so big and moist, you won’t believe it! And you get to eat the whole thing!!

Ingredients
1 egg, slightly beaten
1/2 banana, mashed
1/3 cup vanilla non-fat yogurt (100 cals/8 oz), (Replaces milk in pancake mix)
1/2 teaspoon vanilla extract
2 Tablespoons sugar substitute (I use Splenda)
1 package NutriSystem Pancake Mix
1 Tablespoon chopped nuts (optional)

Directions
Preheat oven to 375 degrees. In small bowl, mix banana, egg, yogurt, vanilla, and sugar substitute, stirring well after each addition. Stir in pancake mix. Add nuts, if desired. Bake 35 minutes or until toothpick inserted in center comes out clean.

If you prefer to cook this in the microwave, texture will be a little spongy, but the taste is great. I microwaved mine in a large cereal bowl for four minutes. You could also make muffins by filling muffin cups 2/3 full and removing them from oven when slightly brown on top.

Banana Nut Bread: 320 calories, 10g fat, 17g protein
Tiramisu

Ingredients
1 NutriSystem pancake mix
approximately 1/3 cup of diet lemon/lime soda (I used faygo)
2 teaspoons splenda
dash of vanilla
dash of cinnamon

Directions
Combine above, should be about the consistancy of the pancake batter, maybe just a little thicker. Bake at 400 degrees for about 13 minutes or so, until a toothpick in the center comes out clean. Allow cake to cool for a few minutes and cut it in half crossways, so you have two layer cakes.

Brew a small amount of very strong coffee, or espresso. (You will only use about 1 oz or so) After you cut the cake, spoon about 2 or three tablespoons of the coffee onto each half of the cake, and allow it to soak in. I put the cakes into the fridge to cool them faster.

Filling
(While the cake is baking, mix together)
1/2 cup low fat ricotta cheese
2 teaspoons splenda
dash of vanilla

Now just layer, coffee-soaked cake, half of the filling, topped with another coffee-soaked cake, and the rest of the filling. Sift a little cocoa powder on top. You may choose to add a little bit of sugar free chocolate sauce onto the cake before putting the filling on it. Chill it baby!

Counts as 1 NS Entree, 1 dessert (the ricotta cheese falls into the dessert parameters, it is a little low on carbs, but I can live with that), 1 free food (if you use the chocolate sauce.)
NS Waffles (Makes 3 Servings)

Ingredients
3 NS Pancake Mixes
FF milk (per package instructions)
1 ripe, soft banana
1/3 cup strawberries (topping)
SF syrup (optional)
ICBINB (optional)

Directions
Prepare the pancake mix according to package instructions. Mash banana and fold into batter. Cook in a waffle iron sprayed with calorie-free cooking spray. Top with a few strawberries or other fruit to round out a complete fruit serving. Waffles traditionally have some oil in the batter to make the waffles a little crispy. I've been trying to recreate that crispiness, and the oil from the banana has come the closest. Obviously this makes waffles for 3 people, or you can save the batter for another day. One banana per 3 pancake mixes seemed to work the best.

Makes 3 NS entrees and 3 fruit servings (with the added fruit on top) plus free foods (SF syrup, ICBINB)
Banana Oatmeal Creme Pie

Ingredients
1 NS Apple Cinnamon Oatmeal
1-6oz. Blue Bunny lite 85 Coconut Creme Pie Yogurt
1/2 banana cut up
2 Tablespoons FF Cool Whip (optional)

Directions
Make oatmeal according to package. Mix in yogurt and cut up banana. Add FF Cool Whip if desired.You can use regular Oatmeal or the Apple cinnamon. Apple cinnamon gives it a sweeter taste.

"I saw a commercial for a restaurant showing cinnamon stacks, and thought I could try it with NutriSystem foods. It's excellent! I had fresh strawberries on it and found it very filling. Plus, it satisfied my urge for a cinnamon roll!"

Ingredients
1 package NutriSystem Pancake Mix
1 teaspoon vanilla
1 teaspoon cinnamon
1 oz. fat-free cream cheese
Dash of cinnamon
1/4 teaspoon vanilla
1-2 packets Splenda
1-2 drops skim milk
1-2 Tablespoons fat-free Cool Whip
1 1/4 cup fresh strawberries

Directions
Prepare NutriSystem Pancake Mix as directed, but add 1 teaspoon vanilla and 1 teaspoon cinnamon; make 3 pancakes.

Blend softened cream cheese, add a dash of cinnamon, 1/4 teaspoon vanilla, Splenda, and just a drop or two of skim milk to thin it a little more.

Spread mixture on each pancake, stack them, and then top with fat-free COOL WHIP. Sprinkle with cinnamon and strawberries (optional). Enjoy!

Counts as breakfast entrée + 1/2 protein serving (the cream cheese) + free foods.
Optional 1 1/4 cup of fresh strawberries adds a fruit serving.
Fruit Crepes

Ingredients
1 NutriSystem pancake mix
1 egg
water
fresh fruit (I like this with raspberries)
fat free cool whip (optional)
SF syrup (optional)

Directions
Take your pancake and mix with one egg and add water until it is very thin. Then put in a large fry pan and spread it around. It will make a very thin, crepe-like pancake.

While this is cooking, heat your raspberries up with a little splenda or FF jam. Put the raspberries on top of the cooked pancake, top with a little cool whip and if you want, roll it up, crepe-style. Another option is to top with a little sugar free syrup.

Strawberry Cream Cheese Muffins

Ingredients

1/8 cup Egg Beaters or 1/2 beaten egg
1/4 cup FF strawberry cream cheese
1/8 cup skim milk
1 tablespoon Splenda
1/2 teaspoon vanilla
dash cinnamon
1 NutriSystem Pancake Mix

Directions
Blend cream cheese and egg together. Mix in skim milk, Splenda, vanilla and cinnamon. Add pancake mix and stir just until blended. Divide batter among 6 mini muffin tin wells. Bake at 400 degrees for 6-8 minutes or until tops are firm to the touch (I use a toaster oven). Upon removal, spritz tops with ICBINB spray if desired.

Sand's Southwestern Eggs

Ingredients
1 container of NutriSystem eggs, any flavor
1 1/2 teaspoons Salsa con queso Cheese (found with Mexican foods)
Dash of chili powder
Dash of salt
Dash of black pepper
Dash of paprika
Dash of parsley, optional

Directions
Add spices and water (as directed on package) to eggs and cook on stovetop until well done and not watery. Slowly add in the salsa con queso and stir gently. Enjoy!

You will never say your eggs are bland again after eating these!

Cinnamon-Banana Pancakes

This is a very simple way to dress up the pancakes but it's delicious!

Ingredients
1 NS pancake mix
1/2 banana
2 Tablespoons FF cool whip
1 packet Splenda
2 teaspoons cinnamon

Directions
Prepare pancakes as directed. Slice bananas into rounds. Mix cool whip, Splenda, and cinnamon. Top the pancakes with the bananas and a dollop of the whip mixture.

Strawberry Pigs in the Blanket

Ingredients
1 NutriSystem Pancake Mix
2 Morningstar Sausage Links
1 Tablespoon Strawberry FF Cream Cheese (optional)
Strawberries
SF Pancake syrup (I use WF Strawberry Syrup but any SF Maple is good too)

Directions
Prepare Pancake mix as directed but make batter thinner to make crepes.. (Crepes are easy to make just use an 8" non stick pan ..spray with Pam..drop in 2 tbs. of batter and swirl in the pan ,gently turn over after bubbles appear ..repeat to make 4 crepes ) Heat MS Sausage links in microwave..split each one in 2 lengthwise. Spread Strawberry CC on each crepe (optional). Place one half link in center of each crepe and roll up. Pour SF Syrup on crepes and heat in microwave for 30 secs. Top with cut up Strawberries or eat them on the side.

1 Tbsp unsweetened cocoa powder
1 Tbsp sugar substitute
1/3 cup FF chocolate milk*
1/4 tsp vanilla extract

Directions
Preheat oven or toaster oven to 400. Spray mini muffin tin with non-stick cooking spray. Mix the dry ingredients together in a bowl. Add the chocolate milk and vanilla to the dry ingredients and mix well. Fill muffin wells 1/2-2/3 full. Bake for about 10 minutes. Makes 8-10 mini muffins.

*I used 1/4 c ff milk and enough Walden Farms zero calorie chocolate syrup to make 1/3 cup of chocolate milk.

Counts as 1 breakfast entree + 1 free food (You still get to have your protein and fruit-- great with a glass of cold milk!)

Directions
Preheat oven or toaster oven to 400. Spray mini muffin tin with non-stick cooking spray. Mix the dry ingredients together in a bowl. Add the chocolate milk and vanilla to the dry ingredients and mix well. Fold in the dried cherry halves. Fill muffin wells 1/2-2/3 full. Bake for about 10 minutes. Makes 8-10 mini muffins

*I used 1/4 c ff milk and enough Walden Farms zero calorie chocolate syrup to make 1/3 cup of chocolate milk.
